Shrimp and Grits

If you ask my husband what his favorite meal (that I cook) is he would absolutely tell you: shrimp and grits. Over the years we have been married, I have made them many ways. Now, I have taken bits and pieces from all the recipes I've tried and melded them together to create one that we love. One reason He likes them is because the grits are creamy (seriously if you don't like grits, you've probably never had creamy grits. It makes all the difference in the world! I promise). 

To start, chop up a green bell pepper and an onion. I like to chop them up really well so they cook down and blend in more. Then, throw them into a pan and toss in 2 strips of raw bacon. Cook them while stirring until the peppers and onions are tender.



Toss in 1 lb of fresh or frozen shrimp. Cook until pink.
(I think here, I even used precooked frozen shrimp and just cooked them until they were warm).


Add in somewhere around 1 -1.5 cups of chicken broth. Less if you like your shrimp and grits thicker, more if you like them soupy.



Throw in some Worcestershire sauce. I just shake some in. I would guess it to be around a Tablespoon.



Add in some garlic powder (1 tsp) and cayenne pepper. (to taste. we like about 1/2 tsp for a nice subtle kick).


Bring it to a boil. Add a 2-3 Tablespoons of cornstarch (you could also use plain flour) to thicken it up. I like to add just 1 Tablespoon at a time until it reaches a gravy like consistency.


Then let it simmer while you cook the grits.  NOTE: before you serve, remove the bacon strips you added in the beginning. But don't be sad about it... We'll crumble some nice crispy bacon on top before you dig in!



Now before you make the grits, you need to cook up some bacon! I like to bake mine in the oven on 375 for about 15-20 minutes until it is nice and crispy. But you can cook the bacon any way you want.



To make the grits bring 3 cups of water to a boil. Then add in 1 cup of grits (I use the quick 5 minute kind). Stir it up.


Add in 1 cup of half and half.



Throw in at least 4 a half stick of butter. (No one's going to be complaining if you want to throw in a little more).  Add a pinch of salt.


Cook for 10-15 minutes while stirring. I repeat do not walk away from this pot or you will be sorry!

Now spoon some grits onto your plate. Ladel on some of the shrimp mixture. Crumble up some of that crisp bacon and eat up.



Shrimp & Grits

Ingredients:Shrimp Mixture
1lb of Shrimp (fresh or frozen)
1 Cup of Chicken Broth
1 onion diced
1 green bell pepper diced
2 strips of raw bacon for cooking
2-3 T of corn starch
1 tsp garlic powder
1/2 tsp cayenne pepper
Worcestershire sauce to taste
Crisp bacon for topping

Grits
 3 cups of water
1 cup of grits
1 cup of half and half
1/2 stick of butter
pinch of salt

Directions:
Cook bacon for topping in the oven at 375 for 15-20 minutes until crisp. Crumble.

Add bell pepper, onion, and two slices of bacon to a pan. Cook while stirring on med-high heat until peppers and onion are tender. Add in the fresh or frozen shrimp and cook until they are pink. Add in chicken broth, Worcestershire sauce, garlic powder, cayenne pepper and bring to a boil. Add in cornstarch 1T at a time until the sauce begins to thicken. Turn down the heat and let it simmer while you cook the grits.

For the grits, bring 3 cups of water to a boil. Stir in the grits. Add the half and half, butter and salt. Cook for 15-20 minutes while you stir!

Before serving remove the bacon strips from the shrimp mixture and throw them away.

Put some grits on a plate, add some of the shrimp mixture and then top with some of that crisp, crumbly bacon.
